completionStatus is described in the main part of the information model.

It is described in section 5.2.1:

The definition of completionStatus may seem a little odd (with names 
like "unknown") but the values and the definition have been chosen for 
compatibility with the CMI model used by SCORM.

You won't need to worry much about this value unless you are dealing 
with adaptive items (see the specification for a definition).  In which 
case, completionStatus tells you if the candidate 'completed' the task 
or not.  "unknown" is a typical value that this variable will take for 
most common types of item.
